UC Riverside researchers discovered that soybean oil, a common ingredient, promotes weight gain in mice due to the oxylipins it produces in the body. These fat-derived molecules, rather than the oil itself, are the culprit. Oxylipins trigger inflammation, disrupt liver function, and influence genes associated with metabolism, ultimately contributing to weight gain. This highlights a potentially overlooked mechanism by which soybean oil impacts health.
